Easy Spicy Sausage, Rice and Vegetables

You know those evenings when you’re exhausted and the last thing you want to do is make dinner for the family? Yeah, me too. So, thank goodness you can throw together something fast, easy and yummy with a quick ingredient like Minute® Rice.

I recently had one of those “so tired what can I whip up quickly?” dinnertimes, so here’s what I came with in a pinch–and it was super yummy and a big hit with the family! The great thing about this recipe is you can adapt it to what you have in your refrigerator, pantry and freezer, and then add it to the Minute® Rice for a quick dinner. (I love adaptable recipes, don’t you?)

Minute Rice Spicy Sausage Recipe

Spicy Sausage, Rice and Vegetables Recipe


1-2 TB Vegetable Oil

13-oz package of kielbasa or turkey sausage, cut into 1-inch slices

12-oz frozen mixed vegetables

10-oz can of diced tomatoes with green chilis

14.5-oz can of diced tomatoes

1/2 C water

2 C Minute® Rice (we used white Premium, but you can use brown Minute® Rice, too)

1 TB Worcestershire sauce

1/4 tsp cayenne pepper

1/4 tsp ground garlic

Salt and pepper to taste


Minute Rice1. Place the oil and sliced sausage in a pan and heat sausage until brown.

2. Add both cans of tomatoes, water, Worcestershire sauce, cayenne pepper, garlic, salt and pepper. Cover and bring to a boil.

3. Add Minute® Rice and frozen vegetables, cover and bring to boil again. Then, reduce heat and simmer for 15 minutes.
