Perfect Pumpkin Cookies
Don’t tell anyone, but I have found the perfect pumpkin cookies. I’m totally serious. If you’re looking for an awesome addition to your Fall classroom treats, your Thanksgiving dessert table or even a take-along to a gathering, these are it.
I found the cookies on Pinterest from a blogger named Allison on her House of Hepworths blog.
(She may be my new best friend.)
(Don’t tell her though, she doesn’t know yet.)
(Actually, she doesn’t even know that I exist, but whatever. Small details.)
Anyway, Allison gives an awesome tutorial on her Pumpkin Cookies with Cream Cheese frosting and they are truly to die for.
Now, they aren’t the “chop them off the refrigerated roll 10 minute cookies” because they are made from scratch. However, the time and effort is well worth it. (And, I haven’t made made-from-scratch cookies in a long time. Now I remember why I used to do it. The taste is so superior to the boxed/refrigerated stuff.)

One of the best things about these cookies are that they are equally as good unfrosted as with the frosting. (As evidenced by the little 3 year old hands that kept stealing them off of the counter while they were cooling.) I made them for a church Harvest Festival and frosted some and left some without frosting because … they are just that good. Also, they aren’t super sweet, so the cookies make a great accompaniment to coffee after dinner.
Here are my tips after making Allison’s cookies:
-I omitted the cinnamon and nutmeg separately and used 3 tsp. of pumpkin pie spice instead. (I think I actually could’ve used 4 tsp. and will try that next time.)
-Do NOT double this recipe. I counted over 120 cookies after we spent an afternoon eating on them. So, there are plenty to go around at any event.
-I’m not sure what Allison used on top of her icing, but I dusted the frosting with a cinnamon-sugar mixture.
-The icing doesn’t “set” (at least my didn’t), so I popped them in the freezer for a few minutes in order to transport them.
